Pueblo’s brings festive atmosphere and great menu to town

LIBERTY – Folks have been waiting for quite some time for any word on the opening of Pueblo’s, as renovations have been underway for well over a year at the old Casa Don Boni. Well, wait no further because they are open for business.
The entire building has undergone mass renovation, seen on the exterior with bright colors and eye-catching signage. However, the beautiful outdoor bar area, one of two bars at the new eatery, is even more noticeable.
If you think the outside is something, wait until you enter the building and get a glimpse of the beautiful, bright, and festive interior.
Owned by the Lozano family, this is the newest in a chain of restaurants that began in Cleveland over 20 years ago when the family launched Pueblo Viejo.
According to Fernando Lozano, one of seven siblings associated with this family-owned business, they began working for their uncles in Tomball during the 80s at Rancho Grande, learning their craft. Now they have eateries in several locations, including Livingston, Splendora, Porter and two establishments in Cleveland.
When the family had the opportunity to buy the old Casa Don Boni, they jumped at it and have been working to get the new location open ever since.
“ We’ve been working a long time on this,” said Lozano.
Pueblo’s serves an extensive menu with traditional Tex-Mex and Mexican- style seafood.
You can count on great fajitas and other unique dishes, like the Lozano, pointed out one of their best seafood dishes, the Flaco Seafood Platter.
Another popular menu item is their Cowboy Mac and Cheese, a creamy macaroni dish topped with shredded cheese and bacon, chicken or beef fajita meat, or both. You can also have grilled shrimp tossed in if you like.
You will also find oysters on the half-shell on the menu.
Their menu is developed by Jim Condra, who Lozano calls one of the best chefs in East Texas. Condra is known locally for his time at Hilltop Herb Farm and Restaurant and has quite the resume, learning from some of the best while spending time in France honing his passion for food.
While the food is sure to keep you coming back for more, there are also plenty of great drinks to wet that whistle.
“I’m telling you, we’ve got the best margaritas in East Texas,” said Lozano.
Plenty of flavors of the beloved adult beverage will be available at both bars.
Pueblo’s opens every day at 11 am and is open Sunday – Wednesday until 9:30 pm, Thursday until 10 pm and Friday – Saturday until 10:30 pm.
There will be daily specials and lunch specials on weekdays.
Also, for all of your music lovers, with live bands and karaoke Thursday- Saturday night, with fun for everyone.
He also wanted to extend his most profound thanks to the City of Liberty for working with them to ensure things were done right.
Lozano encourages everyone to come out and enjoy the food, drinks and atmosphere.
